- 2 heads broccoli, chopped
- 4-5 cloves garlic, sliced
- 1/2 large red onion, diced
- 1 pint grape tomatoes, halved
- 1/4 cup white wine
- 1/2 cup vegetable broth
- 3 ounces asiago cheese, grated (or parmesan)
- 1 teaspoon red pepper flakes (or more if you like heat)
- 2 tablespoons olive oil
- 1 lb fettuccine pasta, cooked according to package directions
- salt and pepper
Directions

1Finely chop broccoli.

2Heat olive oil in a large skillet.

3Add all veggies except green onions.

4Cook for 5-7 minutes.

5Add cilantro and continue cooking for 2-3 more minutes.

6Heat grill (or another frying pan) and spray with cooking spray.

7Place tortilla in pan and top with about 1/2 cup of veggies.

8Sprinkle with cheese and green onions.

9Top with a second tortilla.

10Grill for aproximately 45 seconds to 1 mintute, depending on heat.

11Flip and grill other side.

12Remove from pan and cut.

13Serve with salsa and sour cream if desired.
