- 2 (10 oz.) pkg. chopped broccoli, divided
- 17 oz. can English peas
- 10 3/4 oz. can cream of mushroom soup
- 3/4 c. mayo
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 c. shredded Cheddar cheese
- 2 eggs, beaten
- 1/2 c. Ritz crackers, crushed
Directions

1Cook broccoli according to package directions.

2Drain. Arrange 1 package broccoli in a greased 2-quart casserole.

3Cover with peas.

4Combine mushroom soup, mayo, salt, pepper, cheese and eggs to make sauce.

5Pour half of sauce over broccoli and peas. Add remaining broccoli and top with remaining sauce.

6Sprinkle cracker crumbs on top.

7Bake at 300° for 30 minutes.

8Makes 8 servings.
