- 1 c. skim milk
- 3/4 c. fat-free egg substitute
- 2 c. chopped broccoli
- 1/2 c. diced green peppers
- 1/2 c. shredded reduced-fat Monterey Jack cheese
- 3 scallions
- 2 Tbsp. minced fresh dill
- 2 Tbsp. grated Parmesan cheese
Directions

1In a large bowl, mix the milk and eggs.

2Stir in the broccoli, peppers, Monterey Jack, scallions and dill.

3Coat a 9-inch pie plate with nonstick spray.

4Add the broccoli mixture.

5Sprinkle with Parmesan.

6Bake at 375° for 30 minutes or until knife inserted in the center comes out clean and the quiche is lightly puffed and golden on top.
