  • 1 c. skim milk
  • 3/4 c. fat-free egg substitute
  • 2 c. chopped broccoli
  • 1/2 c. diced green peppers
  • 1/2 c. shredded reduced-fat Monterey Jack cheese
  • 3 scallions
  • 2 Tbsp. minced fresh dill
  • 2 Tbsp. grated Parmesan cheese

    In a large bowl, mix the milk and eggs.

    Stir in the broccoli, peppers, Monterey Jack, scallions and dill.

    Coat a 9-inch pie plate with nonstick spray.

    Add the broccoli mixture.

    Sprinkle with Parmesan.

    Bake at 375° for 30 minutes or until knife inserted in the center comes out clean and the quiche is lightly puffed and golden on top.
