Broccoli Rice Casserole Recipe

  • 6 tbsp. flour
  • 1 teaspoon salt
  • Healthy pinch of pepper
  • 6 tbsp. butter
  • 3 c. lowfat milk
  • 2 c. grated Cheddar cheese
  • 1 can Cheddar cheese soup
  • 1 c. mayonnaise
  • 2 1/2 c. cooked instant rice

    Heat butter in sauce pan on high heat.

    Add in flour, salt and pepper.

    Stir in lowfat milk.

    Reduce heat to medium and stir till sauce starts to thicken.

    Turn to off and stir till thick.

    Add in Cheddar cheese.

    Stir in 1 can Cheddar cheese soup and 1 c. mayonnaise.

    Cook broccoli for about 5 min and add in to cheese sauce.

    Stir in cooked instant rice (about 2 1/2 c.) put in large casserole dish and bake at 350 degrees for about 1 hour.
