Broccoli Ricotta Pie

  • 1 10 oz pkg. Frozen Broccoli, thawed
  • 1 tbsp. Butter
  • 1 C. Onion, minced
  • 15 oz. Ricotta Cheese
  • 2 Eggs
  • 3\4 tsp. Salt
  • 1\4 tsp. Pepper
  • 1\4 tsp. Nutmeg
  • 6 tbsp. Parmesan Cheese
  • 1 9 Pie Shell, (400~ until lightly browned).

Directions

    Throughly drain and squeeze thawed broccoli. Melt butter and fry onions until soft. Add broccoli and stir until most of the moisture is gone. Remove from heat.

    In a large bowl, combine all ingredients and stir until the mixture looks like green and white marble. Pour into Baked pie shell. Bake at 350° for 40 min, or until top is golden, and filling is set.

    You may add mushrooms. Serves 6
