- 1/4 c. water or chicken broth
- 1/4 c. chopped green bell pepper
- 1/4 c. chopped onion
- 1/2 c. chopped mushrooms
- 1 tsp. chopped fresh parsley
- 1/2 tsp. dried basil leaves
- 1/2 tsp. dried oregano leaves
- 1/2 tsp. dried thyme leaves
- 2 c. low-sodium tomato sauce
- 3 c. chopped broccoli, steamed
- 1/4 c. nonfat Parmesan cheese
- 1 c. nonfat skim Ricotta or cottage cheese
- 1/2 tsp. black pepper
- 6 lasagne noodles, cooked and well drained
Directions

1Heat water or broth in a saucepan over medium heat.

2Add green pepper, onion and mushrooms.

3Cook and stir over medium heat for 5 minutes or until vegetables are lightly browned.

4Add more liquid, if needed.

5Add parsley, oregano, thyme and tomato sauce.

6Simmer over very low heat for 10 minutes.
