Ingredients

  • 1/4 c. water or chicken broth
  • 1/4 c. chopped green bell pepper
  • 1/4 c. chopped onion
  • 1/2 c. chopped mushrooms
  • 1 tsp. chopped fresh parsley
  • 1/2 tsp. dried basil leaves
  • 1/2 tsp. dried oregano leaves
  • 1/2 tsp. dried thyme leaves
  • 2 c. low-sodium tomato sauce
  • 3 c. chopped broccoli, steamed
  • 1/4 c. nonfat Parmesan cheese
  • 1 c. nonfat skim Ricotta or cottage cheese
  • 1/2 tsp. black pepper
  • 6 lasagne noodles, cooked and well drained

Directions

    Heat water or broth in a saucepan over medium heat.

    Add green pepper, onion and mushrooms.

    Cook and stir over medium heat for 5 minutes or until vegetables are lightly browned.

    Add more liquid, if needed.

    Add parsley, oregano, thyme and tomato sauce.

    Simmer over very low heat for 10 minutes.
