  • 2 - 3 small head broccoli
  • 6 to 8 slices cooked bacon, crumbled
  • 1/2 cup chopped sweet onion
  • 1/2 cup dried cranberries
  • 4 oz roughly chopped pecans
  • 1/2 cup halved cherry tomatoes
  • 8 oz chevre style goat cheese, optional
  • 3/4 cup mayonnaise
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons dijon or honey dijon mustard
  • 2 tablespoons sugar
  • Salt and white pepper

Directions

    REmove the broccoli stem and leaves. Cut the broccoli into bite-size florets. Place in a large bowl. Add the crumbled bacon, onion, cranberries, pecans, tomatoes, and if using, goat cheese. In a small bowl, combine the remaining ingredients, stirring well. Add to broccoli mixture and toss gently.
