Broccoli Salad

Ingredients

  • 1 c. raw rice
  • 1 bunch broccoli, stemmed
  • 2 to 3 onions or 1 large Vidalia onion
  • 1/2 c. dark raisins
  • 2/3 c. mayonnaise
  • 1/4 c. sugar or Sweet 'N Low to taste
  • 1 Tbsp. vinegar
  • 2 or 3 cans water chestnuts, sliced

Directions

    Cook rice and cool.

    Slice broccoli and onions into food processor and process.
  3. 3
    Mix all ingredients.

    Cover and chill. Best made day before.

    Serves well with grilled chicken breast, butter beans, okra and sliced tomatoes.
