Broccoli Souffle

- 1/2 c. salad dressing or mayonnaise
- 1/4 c. all-purpose flour
- 1 1/2 c. milk
- 1 tsp. salt
- 1 (3 oz.) can grated Parmesan cheese
- 1 (10 oz.) thawed drained frozen broccoli
- 4 large separated eggs
Directions

1Combine mayonnaise and flour in saucepan; mix well.

2Gradually add milk and cook and stir constantly over low heat until thickened.

3Add salt and cheese and continue cooking until cheese melts.

4Cool slightly and stir in broccoli and slightly beaten egg yolks.

5Beat egg whites until stiff peaks form and fold into broccoli mixture.

6Pour mixture into greased 1 1/2-quart casserole dish.

7With tip of spoon, make slight indention around top of souffle to form a top hat.

8Bake at 300° for 1 hour and 15 minutes.

9Serve immediately.
