Broccoli Soup

Ingredients

  • 3 Tbsp. butter or margarine
  • 3/4 c. chopped onion
  • 1 c. chopped celery
  • 3 (10 oz.) pkg. frozen broccoli or fresh chopped broccoli (the more broccoli you add, the thicker the soup)
  • 4 1/2 c. chicken broth
  • 1 1/2 c. light cream
  • 1 (4 oz.) can chopped mushrooms or fresh mushrooms

Directions

    Saute onion and celery in butter.

    Cook broccoli in broth. Combine all ingredients, except cream and mushrooms and refine in a blender.
  3. 3
    Return mixture to pot and add cream and mushrooms. Heat and serve.
