Broccoli Soup

Ingredients
- 1/4 c. butter
- 1/2 c. sliced onion
- 1 c. chopped celery
- 1/2 c. flour
- 2 c. milk
- 2 c. cubed ham, fully cooked
- 2 c. half and half
- 3 c. fresh broccoli
- 4 c. water
- 4 tsp. instant chicken bouillon
- 3/4 c. Velveeta pimento cheese, cubed
Directions

1In large frypan, saute butter, onion and celery.

2Blend in flour, stirring well.

3Add milk and half and half slowly; keep stirring until thick and smooth.

4Remove from heat; cover and let set.

5In a 4-quart (or larger) saucepan, cook broccoli in 4 cups water for 6 minutes.

6Add chicken bouillon; cook and gradually add the milk-onion-celery mixture.

7Simmer on low heat.

8Add cheese and ham until cheese is completely melted.

9Serves 8.
