- 1 bunch fresh broccoli
- 3 c. chicken stock
- 1/2 onion, chopped
- 4 Tbsp. butter
- 5 Tbsp. flour
- half and half cream
- salt and white pepper to taste
- garnish (paprika, croutons and parsley)
Directions

1Cook broccoli in stock with onions until soft.

2Place in blender and blend quickly, leaving small pieces of broccoli.

3Make a roux using butter and flour.

4Cook 3 minutes, stirring constantly.

5Add broccoli and stock to roux.

6To avoid lumps, stir constantly until thickened.

7Thin to preferred consistency with cream.

8Add seasoning.

9Garnish.
