Broccoli Soup

Ingredients

  • 1 large bunch broccoli (including stalks)
  • 3 c. boiling water
  • 3 Tbsp. butter
  • 5 Tbsp. flour
  • 12 oz. can evaporated milk
  • 1 1/2 c. milk
  • 1 1/2 tsp. salt
  • 1/4 tsp. onion powder
  • 10 to 15 slices Velveeta cheese

Directions

    Strips off stems and fibrous outer peel of broccoli stalks; cut into pieces, flowerets and stalks.

    Place broccoli in large heavy saucepan and add boiling water and cook for 10 to 12 minutes.

    Remove choice flowerets (2 cups) after first 5 minutes and reserve.

    When remaining broccoli is tender, crush with potato masher.

    In the microwave, melt

    butter and then add flour, evaporated milk, milk, salt, onion powder and Velveeta cheese. Cook until thickened.

    Add to crushed broccoli.

    Just before serving, add reserved flowerets.

    Serve piping hot.
