Broccoli Soup

Ingredients

  • 1 bunch of broccoli
  • 3 cups chicken stock
  • 1 onion
  • 2 potatoes
  • 1 tbls butter or oil
  • Salt & pepper to taste

Directions

    cut broccoli cutup, you can include the stem at least 3 quarters down (the bottom might be dry)

    Saute onion in butter (oil) till wilted over medium heat
  3. 3
    Add the cut up broccoli and potatoes
  4. 4
    Stir a little and leave for 5 minutes after adding salt and pepper
  5. 5
    Add the stock and bring to a boil. Reduce heat to medium

    Simmer until broccoli and potatoes are soft about 30 to 40 minutes

    Blend and let cool. Refrigerate

    Soup might be thick, you can loosen by adding 1 cup water when reheating.

    If soup is too watery you can boil a potato (chopped is faster) and add to the soup.
