Broccoli Soup

Ingredients
- 1 bunch of broccoli
- 3 cups chicken stock
- 1 onion
- 2 potatoes
- 1 tbls butter or oil
- Salt & pepper to taste
Directions

1cut broccoli cutup, you can include the stem at least 3 quarters down (the bottom might be dry)

2Saute onion in butter (oil) till wilted over medium heat

3Add the cut up broccoli and potatoes

4Stir a little and leave for 5 minutes after adding salt and pepper

5Add the stock and bring to a boil. Reduce heat to medium
-
6Simmer until broccoli and potatoes are soft about 30 to 40 minutes

7Blend and let cool. Refrigerate

8Soup might be thick, you can loosen by adding 1 cup water when reheating.

9If soup is too watery you can boil a potato (chopped is faster) and add to the soup.
