Broccoli Soup

  • 2 Tbsp. grated onion
  • 1/4 c. flour
  • 2 c. milk
  • 1/2 tsp. salt
  • 1/4 to 1/2 tsp. dried whole basil
  • 1/2 c. butter or margarine, melted
  • 2 c. chicken broth
  • 1/8 tsp. garlic powder
  • 3 c. fresh or frozen broccoli

Directions

    Saute onion in butter.

    Add flour, stirring until smooth. Cool 1 minute, stirring constantly.

    Gradually add milk and chicken broth; cook over medium heat, stirring constantly, until mixture is thickened and bubbly.

    Stir in salt, garlic powder and basil.

    Add broccoli and cover; cook over medium heat for 15 minutes or until broccoli is done.
