broccoli spinach orzo bake

  • 1/2 cup uncooked orzo pasta
  • 3 cup frozen broccoli
  • 3 cup frozen cut leaf spinach
  • 1 can cream of celery soup
  • 1/2 cup shredded parmesan cheese, divided
  • 1/4 cup diced onion
  • 3 tbsp milk
  • 1 tsp minced garlic
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp panko bread crumbs
  • 1 tbsp butter, melted

Directions

    Preheat oven to 350.

    Spray 1 1/2 quart baking dish with non stick cooking spray.

    Cook orzo according to package directions.

    During last two minutes of cooking time, add broccoli.

    Return water to a boil and cook 1 minute.

    Add spinach, and return to a boil.

    Drain immediately.

    Mix together pasta, broccoli, spinach, soup, milk, onion, garlic, salt and pepper, and half of the cheese.

    Spread in prepared baking dish.

    In small bowl, melt butter.

    Add bread crumbs and remaining cheese.

    Sprinkle over broccoli mixture.

    Bake 30 minutes or until golden brown and bubbly.
