  • bass fillets
  • 3 to 4 Tbsp. salt
  • 2 qt. water
  • butter
  • lemon juice
  • Tiger sauce
  • black pepper

Directions

    Soak fillets in 3 to 4 tablespoon salt to 2 quarts water overnight to rid bacteria and musky scent.

    Double rinse fillets. Place on foiled cookie sheet.

    Butter fillet tops with basting brush to moisten and baste with lemon juice to prevent drying out. Add Tiger sauce and black pepper.

    Broil at 450°.

    Have oven hot when you place fillets in oven.

    Use fork to check tenderness. Fillet pieces will start to roll up and flake when tender.
