- bass fillets
- 3 to 4 Tbsp. salt
- 2 qt. water
- butter
- lemon juice
- Tiger sauce
- black pepper
Directions

1Soak fillets in 3 to 4 tablespoon salt to 2 quarts water overnight to rid bacteria and musky scent.

2Double rinse fillets. Place on foiled cookie sheet.

3Butter fillet tops with basting brush to moisten and baste with lemon juice to prevent drying out. Add Tiger sauce and black pepper.

4Broil at 450°.

5Have oven hot when you place fillets in oven.

6Use fork to check tenderness. Fillet pieces will start to roll up and flake when tender.
