- 1/4 c. dry bread or corn flake crumbs
- 2 Tbsp. grated Parmesan cheese
- dash of garlic powder
- 8 slices (1 medium) peeled eggplant
- 1 egg, slightly beaten
Directions

1Combine first 4 ingredients.

2Dip eggplant slices in egg, then coat with crumb mixture.

3Place in shallow baking pan.

4Broil 5 to 7 inches from flame 3 to 5 minutes; turn slices over and continue broiling 3 to 5 minutes until tender.

5Serve hot.
