- 1/4 c. soy sauce
- 2 Tbsp. finely chopped ginger root
- 1/4 c. lemon juice
- 2 Tbsp. vegetable oil
- 1 Tbsp. honey

1If scallops are large, cut into halves.

2Arrange scallops in single layer in square 8 x 8 x2-inch baking dish.

3Heat soy sauce to boiling.

4Add ginger root; reduce heat.

5Simmer, uncovered, for 5 minutes.

6Stir in remaining ingredients.

7Pour over scallops. Cover and refrigerate, stirring occasionally, for 2 hours.
