- 6 eggs
- 1/2 cup chopped onions
- 1/2 cup sliced mushrooms
- 1/2 cup peas
- 1/4 cup shredded cheddar
- 1/2 cup sliced celery
- 2 tbs. Hellmans Mayonnaise
- 3 tbs olive oil
- salt/pepper to taste
Directions

1In a small bowl beat the 6 eggs and add the 2 tbs of mayonnaise. Continue to beat well and add salt/pepper to taste. Mix in remaining ingredients. In a large skillet, add the 3 tbs olive oil, making sure to coat entire pan. Place on high heat burner. Add remaining ingredients to skillet. Allow this mixture to brown on the bottom, gently moving with spatchular. Remove from heat and place in a 350 oven. Bake for 15 mintues or until golden brown. Enjoy!
