- 1 large potato, sliced
- 1 medium zucchini, sliced
- 2 spring onions, sliced
- 2 medium tomatoes, sliced
- 2 Tbsp. chopped fresh basil
- 2 Tbsp. chopped fresh rosemary
- butter
- Parmesan cheese
- salt and pepper to taste
Directions

1Boil potato until tender.

2Line bottom of a 1 1/2-quart greased casserole dish with potato.

3Dab with butter.

4Layer the zucchini on top of the potatoes and sprinkle with Parmesan cheese and half of the herbs.

5Layer the onions and tomatoes and sprinkle with remaining herbs and more Parmesan cheese.

6Add salt and pepper.

7Broil in oven for about 10 minutes or until vegetables are heated and cheese is melted.
