  • 2 (1-pound) dressed Spanish mackerel
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Lemon slices
  • Maitre d'hotel Butter

Directions

    Rinse fish thoroughly in cold water; pat dry. Rub fish inside and out with olive oil, salt, and pepper.

    Place fish on lightly greased rack in a broiler pan. Broil 6 to 7 inches from heating element 5 minutes on each side or until fish flakes easily when tested with a fork.

    Transfer fish to a warm serving platter; garnish with lemon slices. Serve immediately with Maitre d'hotel Butter.
