- 2 (1-pound) dressed Spanish mackerel
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Lemon slices
- Maitre d'hotel Butter
Directions

1Rinse fish thoroughly in cold water; pat dry. Rub fish inside and out with olive oil, salt, and pepper.

2Place fish on lightly greased rack in a broiler pan. Broil 6 to 7 inches from heating element 5 minutes on each side or until fish flakes easily when tested with a fork.

3Transfer fish to a warm serving platter; garnish with lemon slices. Serve immediately with Maitre d'hotel Butter.
