Broiled Tomatoes Recipe

  • 3 med tomatoes
  • 1/2 c. soft bread crumbs
  • 1/2 tsp dry leaf basil
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 Tbsp. butter

Directions

    Cut tomato in half crosswise.

    Make 4 or possibly 5 (1/4-inch-deep) slashes across the cut-side of each tomato half.

    In a small bowl, combine bread crumbs, basil, salt and pepper.

    Sprinkle on cut-side of each tomato half.

    Dot each with butter.

    To complete now: Preheat broiler.

    Broil crumb-topped tomatoes, 5 to 6 inches from heat, till golden.

    Arrange on platter or possibly serving dish; serve warm.

    To make ahead: Cover with plastic wrap or possibly foil.

    Chill up to 24 hrs.

    Remove cover; broil and server as directed above.
