Brown Rice Pudding With Mixed Fruit

- 3.5 oz brown rice
- 3 cups milk
- 3 oz dried apricots, chopped
- 3 oz dried peaches, chopped
- 3 oz currants
- 1 tbsp brown sugar
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 cup plain yogurt, to serve
- 1/3 cup honey, to serve
Directions

1Bring rice and 1 cup water to a boil. Reduce heat and simmer, uncovered, for 8-10 mins, until water has been absorbed. Add milk, fruit, sugar, vanilla and spices. Return to a boil. Simmer, stirring, for 40-45 mins, until rice is tender.

2Serve topped with yogurt and drizzled with honey.
