  • 1 loaf Italian bread
  • 4 x Roma tomatoes
  • 1/2 c. black olives, sliced
  • 1 Tbsp. fresh basil, minced
  • 1/4 c. fresh parsley, minced
  • 1/4 c. extra virgin olive oil
  • 1/4 c. Feta cheese, crumbled Salt and pepper to taste

Directions

    Slice Italian bread lengthwise and place in the oven and allow to brown on the top.

    Meanwhile, combine remaining ingredients in a bowl and mix well.

    Remove bread from the oven and spread tomato mix over bread.

    Return bread to the oven for several min to hot and allow cheese to heat.

    Slice and serve.

    Italian bread works better with this recipe because it is generally wider than French bread.

    However, you could experiment with different types of bread to see that you prefer.
