Brunch Casserole

Ingredients

  • 4 slices bacon, fried
  • 1/2 lb. ham, cubed
  • 1/2 c. butter or margarine
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 to 2 small cans mushrooms
  • 1/2 c. flour
  • 1 (13 oz.) can evaporated milk
  • 16 eggs, beaten
  • 1/2 c. cheese, grated
  • salt and pepper
  • 1 qt. milk

Directions

    Saute bacon and drain.

    Add butter to pan and saute peppers, onions, ham and mushrooms.

    Add flour, salt and pepper to taste. While mixing, gradually add 1 quart of milk until thickened and smooth.

    Set aside.

    Scramble eggs, milk (evaporated) and cheese; salt to taste.

    Alternate layers:

    2 of sauce, 2 of eggs.

    Bake 1 hour at 300°.

    This can be made a day ahead and cooked when needed. Delicious for a brunch.
