- 12 oz. shredded Cheddar cheese
- 12 oz. shredded Mozzarella cheese
- 1 (4.5 oz.) jar sliced mushrooms, drained
- 1/3 c. sliced green onions
- 1/2 medium red bell pepper, chopped
- 1/4 c. oleo, melted
- 1 lb. sausage or 1 lb. bacon
- 1/2 c. flour
- 1/3 c. milk
- 2 Tbsp. chopped parsley
- 8 eggs, beaten
Directions

1In a large bowl, combine cheese.

2Sprinkle 1/2 cheese in a 9 x 13-inch pan.

3Saute mushrooms, onions and pepper in oleo.

4Brown meat.

5Layer vegetables and meat over cheese.

6Sprinkle remaining cheese over meat.

7Combine flour, milk, eggs and parsley; beat. Pour over other ingredients.

8Bake in a preheated 350° oven for 35 to 45 minutes or until brown and eggs are set.

9Garnish with pepper and parsley, if desired.
