  • 12 oz. shredded Cheddar cheese
  • 12 oz. shredded Mozzarella cheese
  • 1 (4.5 oz.) jar sliced mushrooms, drained
  • 1/3 c. sliced green onions
  • 1/2 medium red bell pepper, chopped
  • 1/4 c. oleo, melted
  • 1 lb. sausage or 1 lb. bacon
  • 1/2 c. flour
  • 1/3 c. milk
  • 2 Tbsp. chopped parsley
  • 8 eggs, beaten

Directions

    In a large bowl, combine cheese.

    Sprinkle 1/2 cheese in a 9 x 13-inch pan.

    Saute mushrooms, onions and pepper in oleo.

    Brown meat.

    Layer vegetables and meat over cheese.

    Sprinkle remaining cheese over meat.

    Combine flour, milk, eggs and parsley; beat. Pour over other ingredients.

    Bake in a preheated 350° oven for 35 to 45 minutes or until brown and eggs are set.

    Garnish with pepper and parsley, if desired.
