Brunch Egg Casserole

  • 10 slices white bread
  • 1/2 lb. grated mild Cheddar cheese
  • 1 lb. bacon, cooked and broken in small pieces
  • 6 eggs
  • 3 c. milk
  • 1/2 tsp. salt

    Grease 9 x 13-inch pan.

    Trim crust off bread and butter bread generously; cut into 1-inch cubes.

    Mix bread cubes and cheese in baking dish.

    Put bacon over cheese and bread.

    Add eggs, beaten with milk and salt; pour over top of bread mixture.

    Refrigerate overnight.

    Bake (at least) 50 minutes at 350°.

    You may add parsley or mushrooms before baking.

    Sausage may be substituted for bacon.

    When you bake, it will rise up, fill the pan and be very fluffy.
