Ingredients
- 4 slices bacon, fried crispy
- 1/4 c. oleo
- 1/2 lb. chopped beef or ham
- 1 or 2 (4 oz.) cans sliced mushrooms, drained
- pepper to taste
- 1/2 c. flour
- 1 qt. milk
- 16 eggs
- 1 can evaporated milk
Directions

1Mix together first 5 ingredients.

2Crumble bacon and finely chop beef.

3Sprinkle on flour and add milk.

4Heat and stir until thickened.

5Scramble eggs into 1/2 cup oleo.

6Use a large deep dish casserole or pan, approximately 9 x 13-inch.

7Layer sauce and egg, ending with sauce (usually 4 layers).

8Cover, a must.

9Bake at 275° for 1 hour.

10Can prepare day ahead covered and refrigerated.

11Serves 8 to 12.
