Cabbage And Cheese Soup

Ingredients
- 500 g potatoes, peeled and chopped
- 1 tbsp butter
- 400 g bacon lardons
- 2 medium onions, sliced
- 1 None yellow pepper, diced
- 1 kg savoy cabbage, chopped
- 500 ml vegetable stock
- 150 g cheese
- 1 bunch chives, finely chopped
- 50 g double cream
Directions

1Cook the potatoes in boiling salted water for 15 minutes or until tender, then drain and set aside.

2Heat butter in a large pan and cook the bacon and onion for about 5 minutes then remove and drain on paper towels. Add the peppers, boiled potatoes and cabbage to the pan and cook for about 10 minutes.

3Pour in the stock and return the bacon and onions to the pan. Give it a good stir and simmer for 5 minutes. Stir in the cheese, chives and cream and season to to taste with salt and pepper.
