- 4 toasted English muffins
- 1 (4 1/2 oz.) can deviled ham
- 3/4 c. grated Cheddar cheese
- 1 tsp. Dijon mustard
- 2 eggs, separated
- 1/4 tsp. each: salt, pepper and Tabasco
Directions

1Spread ham on muffin halves.

2Sprinkle with cheese.

3Place on baking sheet.

4Beat egg yolks, mustard, salt, pepper and Tabasco until thick and lemony.

5Beat whites until stiff peaks form.

6Fold into yolk mixture.

7Spoon onto muffins.

8Bake at 350° for 12 to 15 minutes.
