- 1 egg, beaten
- 3/4 c. milk
- 1/4 c. vegetable oil
- 1 1/2 c. Raisin Bran
- 1 c. all-purpose flour
- 2/3 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. cinnamon
Directions

1Preheat oven to 400°.

2Grease or paper line 2 1/2-inch muffin cups. In medium bowl, combine egg, milk and oil.

3Stir in cereal and let stand for 10 minutes.

4In large bowl combine flour, sugar, baking powder, salt and cinnamon.

5Add cereal mixture all at once to dry ingredients, stirring just until moistened.

6Fill muffin cup 2/3 full.

7Bake 20 to 25 minutes.

8Remove from pan.

9Mix 1 tablespoon sugar and 1/8 teaspoon cinnamon.

10Brush top of warm muffins with butter and sprinkle with cinnamon-sugar mixture.
