  • 2 lb Yukon gold potatoes washed and cut into 1/2 inch pieces
  • 1/4 cup olive oil
  • 1 to 2 teaspoons Greek seasoning, to taste

Directions

    Preheat oven to 425.

    Cover 2 baking sheets with parchment paper.

    Set aside.

    Place the potatoes in a large bowl.

    Drizzle with the olive oil and sprinkle with Greek seasoning.

    Toss until coated thoroughly.

    Spread the potatoes on the baking sheets.

    Be sure to spread the potatoes out so they get crispy.

    Bake for 30 to 45 minutes, stirring every 10 minutes, until crispy and golden brown.
