- 2 lb Yukon gold potatoes washed and cut into 1/2 inch pieces
- 1/4 cup olive oil
- 1 to 2 teaspoons Greek seasoning, to taste
Directions

1Preheat oven to 425.

2Cover 2 baking sheets with parchment paper.

3Set aside.

4Place the potatoes in a large bowl.

5Drizzle with the olive oil and sprinkle with Greek seasoning.

6Toss until coated thoroughly.

7Spread the potatoes on the baking sheets.

8Be sure to spread the potatoes out so they get crispy.

9Bake for 30 to 45 minutes, stirring every 10 minutes, until crispy and golden brown.
