Ingredients

  • 2 or 3 squirrels
  • 1 Tbsp. sugar
  • 2 cans tomatoes
  • 1 onion, chopped
  • 1 tsp. pepper
  • 1 tsp. salt
  • 4 potatoes, diced
  • 1 can lima beans
  • 1 can corn

Directions

    Cut squirrels into serving pieces and place in a large kettle with 4 quarts boiling water.

    Add salt, onion, beans, corn, potatoes and pepper.

    Cover and simmer for 2 hours.

    Add sugar and tomatoes.

    Simmer another hour.

    Add butter to taste.

    Simmer 10 minutes.

    Bring to a boil and remove from stove.

    Serve with slaw, cornbread and coffee.

    (Chicken may be used instead of squirrels.)
