Ingredients

  • 1/2 c. chopped onion
  • 1 bell pepper, chopped
  • 2 Tbsp. margarine
  • 2 c. chicken broth
  • 1 lb. cooked chicken, cut into 1 inch pieces
  • 1/2 c. sliced fresh or frozen okra
  • 3 Tbsp. flour
  • 1 (16 oz.) can whole tomatoes (undrained), cut up
  • 1 (15 1/2 oz.) can butter beans, drained
  • 1 (7 oz.) can whole kernel sweet corn
  • 1/4 tsp. crushed red pepper
  • 1/3 c. cold water
  • salt and pepper to taste

Directions

    In large saucepan cook onion and green pepper in margarine until tender.

    Stri in chicken broth, chicken, tomatoes, beans, corn and red pepper; bring to boil.

    Reduce heat; simmer 15 minutes.

    Add okra; simmer about 5 more minutes or until tender. In small jar add flour to cold water; shake well.

    Stir into stew mixture.

    Cook over medium heat until it boils and thickens.

    Add salt and pepper to taste.
