Ingredients
- 3 lb. chicken
- 1 small onion
- 2 qt. tomatoes (canned or fresh)
- 1 qt. butter beans, drained
- 1 qt. whole kernel corn
- 3 medium Irish potatoes
- 1 c. chopped onion
- 5 Tbsp. sugar (optional)
- salt to taste
- black pepper to taste
- red pepper to taste
Directions

1Cook meat and one onion in 1 quart of water and simmer until meat loosens from bones.

2Cut into pieces.

3Discard bones.

4Add salt, peppers and vegetables.

5Stir often while mixture comes to a boil.

6Cover and simmer over low heat for 3 to 5 hours.

7Stir occasionally to prevent sticking.

8This makes approximately 6 quarts of stew.

9This can be frozen.
