Ingredients

  • 3 lb. chicken
  • 1 small onion
  • 2 qt. tomatoes (canned or fresh)
  • 1 qt. butter beans, drained
  • 1 qt. whole kernel corn
  • 3 medium Irish potatoes
  • 1 c. chopped onion
  • 5 Tbsp. sugar (optional)
  • salt to taste
  • black pepper to taste
  • red pepper to taste

Directions

    Cook meat and one onion in 1 quart of water and simmer until meat loosens from bones.

    Cut into pieces.

    Discard bones.

    Add salt, peppers and vegetables.

    Stir often while mixture comes to a boil.

    Cover and simmer over low heat for 3 to 5 hours.

    Stir occasionally to prevent sticking.

    This makes approximately 6 quarts of stew.

    This can be frozen.
