  • 6 whole Roma Tomatoes
  • 1/2 cups Sun-dried Tomatoes, Packed In Oil
  • 3 cloves Garlic
  • 1/4 cups Extra Virgin Olive Oil
  • 2 Tablespoons Balsamic Vinegar
  • 1/4 cups Fresh Basil
  • 1/4 teaspoons Sea Salt
  • 1/4 teaspoons Cracked Black Pepper
  • 1 whole French Baguette
  • 2 cups Shredded Mozzarella Cheese

Directions

    Preheat oven to broiler settting.

    In a large mixing bowl, combine chopped Roma tomatoes, sun-dried tomatoes, minced garlic, olive oil, balsamic vinegar, basil, salt, and pepper.

    Set aside for 10 minutes.

    Cut bread into thick slices.

    Arrange on a baking sheet and put in the oven for 2 minutes, until lightly browned.

    When removed from the oven, put a handful of mozzarella cheese on the bread.

    Top tomato mixture evenly on bread slices.

    Broil until cheese is melted, about 5 minutes.
