- 2 ripe tomatoes
- 3 Tbsp. olive oil
- 1/4 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 6 fresh basil leaves, chopped coarsely
- 6 Kalamata olives, pitted and chopped
- 1/2 loaf Italian bread, sliced
- 2 cloves garlic
Directions

1Using the coarse side of a grater, grate tomatoes into a bowl. Discard remaining skin.

2Add oil, salt, pepper, basil and olives. Mix. Grill bread until brown like Melba toast.

3Before bread cools, rub garlic clove over the entire surface of one side.

4Each slice should use 1/4 clove of garlic.

5Just before serving, spoon tomato mixture over bread.

6Serve in small batches.
