- 1 baguette
- 2 clove garlic, chopped or crushed
- 2 tbsp olive oil, extra virgin
- 6 tomatoes, ripe and diced
- 1 bunch fresh basil, finely chopped
- 1 small red onion
- 250 grams Danish feta
- 1 Balsamic Glaze
Directions

1Preheat oven to 180F.

2Cut and dice the tomatoes and place into bowl.

3Include seeds and juice.

4Cut and finely dice red onion and combine with tomatoes.

5Chop basil thinly and combine with onion and tomatoes in bowl.

6Add garlic, olive oil and salt and pepper to taste.

7Slice bread and coat one side with olive oil.

8Place in oven until golden

9Spoon tomatoe mixture onto bread.

10Crumble feta over tomato and bread.

11Drizzle balsamic glaze over top and decoratively on plate.

12Serve immediately.
