  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon dried basil
  • 1 -2 tablespoon fresh minced garlic
  • 2 cups chopped ripe tomatoes, any variety
  • 1/4 cup finely chopped mild onion
  • 5 -8 basil leaves, chopped
  • 1 tablespoon minced garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 -3 tablespoons olive oil
  • 4 tablespoons grated parmesan cheese

Directions

    stir together chopped tomatoes, onion, basil, chopped garlic, salt & pepper, and 2-3 tablespoons of extra virgion olive oil. Set aside until chicken is done.

    Add olive oil to pan and preheat until oil is shimmering.

    Add chicken to pan, sprinkle with salt & pepper and dried basil. Cook until browned. - about 6 minute Shorter if yousing thin sliced breast. Turn chicken over to brown other side. Cook 2-3 minute Add garlic to pan and cook over medium heat for several min more until chicken is cooked through.

    Place chicken on serving platter and top with Bruschetta mixture. Add a sprinkle of freshly grated paremesan.
