- 1/2 lb Brussels sprout
- 1 tablespoon finely chopped onion
- 2 teaspoons butter
- 2 teaspoons flour
- 1/4 teaspoon mustard
- 1/8 teaspoon tarragon
- 1/2 cup chicken broth (or vegetable broth)
- 1 1/2 teaspoons vinegar
Directions

1Cook sprouts by either steaming or boiling in water, then drain.

2Saute onion in butter till tender.

3Stir in flour, mustard, and tarragon.

4Cook for a minute.

5Add broth and vinegar and cook again till thick and smooth.

6Pour over sprouts and serve.
