- 4 tablespoons butter
- 1/2 cup finely chopped onion
- Leftover mashed potatoes
- Leftover cooked cabbage
- Salt and pepper
Directions

1Melt the butter in a large frying pan over medium heat.

2Add the onion and saute for 3 to 5 minutes, or until soft.

3Turn up the heat slightly and add the mashed potatoes and cabbage.

4Season with salt and pepper and cook for 10 minutes, stirring occasionally to ensure the potatoes and cabbage are thoroughly heated.

5Press down the vegetable mixture with a spatula and let cook until golden brown.

6Flip over and brown on the second side.

7Serve.
