- 12 cup buckwheat flour
- 12 cup all-purpose flour
- 1 teaspoon sugar
- 1 teaspoon baking powder
- 12 teaspoon baking soda
- 14 teaspoon salt
- 1 large egg, lightly beaten
- 1 14 cups buttermilk
- 2 12 tablespoons vegetable oil
- 14 lb Canadian bacon, cut into 1/8-inch pieces
Directions

1Stir together flours, sugar, baking powder, baking soda, and salt.

2Add egg, buttermilk, and 2 tablespoons oil and stir just until blended.

3Stir in bacon.

4Heat a griddle or large heavy skillet over moderate heat until hot, then lightly brush with remaining 1/2 tablespoon oil.

5Use @ 1/4 cup batter per pancake, pour batter onto griddle and cook, turning over once, until golden.
