Ingredients

  • 3 slices bacon, cut into 1-inch pieces
  • 1 large onion, minced
  • 2 lb. buffalo, shredded or cut into very small pieces
  • 3 cloves garlic, minced
  • 1 green bell pepper, seeded and sliced
  • 1 (16 oz.) can chopped tomatoes with liquid
  • 2 (16 oz. each) cans red kidney beans with liquid
  • 2 Tbsp. chili powder
  • 1/2 tsp. each: ground cumin, salt and celery salt
  • 1/4 tsp. each: hot pepper flakes and dried oregano
  • 1 tsp. molasses
  • 1 (6 oz.) can tomato paste

Directions

    In large heavy saucepan over medium heat, fry together bacon and onion, stirring occasionally, until tender, about 5 minutes. Add buffalo meat and brown over medium heat.

    Stir in all remaining ingredients.

    Simmer, uncovered, stirring occasionally, until buffalo is tender and flavors are blended, about 45 minutes.
