- 2 lb. potatoes
- 1 tsp. salt
- 3 Tbsp. snipped parsley
- 1 small onion, chopped (about 1/4 c.)
- 3/4 c. shredded sharp cheese
- 3 Tbsp. margarine or butter
- 3/4 c. half and half
- pepper
Directions

1Peel and chop potatoes in 1/2 to 1-inch squares.

2Arrange potatoes in a greased 2-quart casserole in 3 layers, topping each layer with a dash of pepper and 1/3 each of salt, parsley, onion and cheese.

3Dot with margarine and pour half and half over potatoes.

4Cover and cook in a 325° oven for 1 hour and 10 minutes or in a 350° oven for 1 hour.

5Uncover and cook until potatoes are tender, about 30 minutes longer.
