- 2 c. sugar
- 1 c. shortening
- 5 eggs
- 2 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 c. buttermilk
- 1 tsp. coconut extract
- 1 c. flaked coconut
Directions

1Cream sugar and shortening until light.

2Add eggs, one at a time, beating 2 minutes after each addition.

3Combine dry ingredients; add to creamed mixture, along with buttermilk.

4Add extract.

5Gently fold in coconut.

6Pour batter into a greased and floured 10-inch tube pan.

7Bake at 325° for 50 minutes, until done.

8Loosen cake from sides of pan, but do not remove.

9Prepare topping and pour over cake.
