  • 2 lb. beef cubes (can substitute venison cubes, ground venison and ground beef)
  • 2 Tbsp. oil
  • 1 green pepper, chopped
  • 1 large onion, chopped
  • 1 c. diced celery
  • 2 garlic cloves, finely chopped
  • 1 (16 oz.) can tomatoes
  • 6 to 8 oz. beer
  • 1 c. barbecue sauce
  • 1/4 tsp. black pepper
  • 2 Tbsp. chili powder
  • 1 Tbsp. oregano
  • 1 tsp. salt
  • 2 (16 oz.) cans pinto or kidney beans

    Brown beef in oil and drain. Add remaining ingredients, except for beans, and simmer 1 hour. Add beans and continue to simmer 45 additional minutes. If liquid is too thin, 1 can of tomato paste can be added to thicken.
