  • 10-12 oz portobello mushrooms, finely chopped
  • 3 lb lean ground beef
  • 2 tbsp Jamaican Jerk seasoning
  • 3 None bell peppers, seeded, halved
  • 1 None small red onion, sliced
  • 1/4 tsp lime zest
  • 1 tbsp lime juice
  • 1 tbsp orange juice
  • 1 pinch cayenne
  • 2 cups shredded green cabbage, red cabbage and carrot mix
  • 1/4 cup sliced green onion
  • 1/4 cup chopped fresh cilantro
  • 3/4 cup fresh pineapple, julienned
  • 1 None red apple, julienned
  • 8 None egg or kaiser rolls, halved
  • 8 slices lettuce
  • 8 slices tomato

Directions

    Combine mushrooms, beef and seasoning blend. Shape into 8 patties. Set aside.

    Coat peppers and onion slices in oil then grill for 3-4 mins, until softened. Let cool then thinly slice peppers.

    Whisk together lime zest, lime juice and cayenne. Add shredded cabbage mixture, green onion, cilantro, pineapple and apple and toss to combine. Season.

    Grill burgers over medium-high heat for 4 mins per side, or until cooked to your liking. Arrange on buns with lettuce, tomato, grilled vegetables and coleslaw.
