  • 1 lb. (450 g) extra-lean ground beef
  • 2 cups salsa
  • 1 green pepper, chopped
  • 1 cup instant white rice, uncooked
  • 1 can (14 fl oz/398 mL) refried beans, warmed
  • 6 large flour tortillas
  • 1/2 cup Cracker Barrel Shredded Tex Mex Cheese
  • 1 cup shredded lettuce
  • 1 tomato, chopped King Sooper's 1 lb For $0.99 thru 02/09
  • 1/3 cup light sour cream

Directions

    Brown meat in large skillet; drain.

    Add salsa and green peppers; mix well.

    Bring to boil.

    Stir in rice; cover.

    Simmer on low heat 5 min.

    Spread beans down centres of tortillas; top with meat mixture, cheese, lettuce and tomatoes.

    Fold in opposite sides of each tortilla, then roll up burrito-style.

    Serve topped with sour cream.
