Butter Bean Salad

  • 2 (15 oz.) cans butter beans, drained
  • 2 Tbsp. olive oil or salad oil
  • 1/3 c. lemon juice
  • 1/4 c. dry parsley
  • 1/2 c. sliced green onions
  • 2 large tomatoes, diced
  • 1 tsp. pepper
  • 1/3 c. packed Feta cheese

    Drain beans and rinse.

    Drain well.

    In a bowl, mix all ingredients, except Feta cheese.

    Cover and chill, then mix crumbled cheese into salad and serve.
